Nestled in the heart of northern Salento, Sava is a small town in Puglia that rewards those who venture beyond the region’s better-known coastal hotspots. Surrounded by endless rows of olive trees and vineyards, it offers an authentic glimpse of rural southern Italy, where life still moves to the rhythm of the seasons and the land. Its compact historic center, with narrow alleys, whitewashed houses and small piazzas, invites slow exploration on foot. Sava is particularly renowned for its wine and olive oil. This is one of the cradles of Primitivo di Manduria, a robust red wine that has become a symbol of Puglia. Many local wineries open their doors for tastings and tours, allowing visitors to learn about traditional winemaking methods and sample full-bodied reds and fragrant rosés. Extra virgin olive oil producers also offer visits, where you can walk among ancient olive trees and discover how the region’s “liquid gold” is made. While Sava itself is inland, it makes an excellent base for exploring the Salento peninsula. Within a short drive you can reach the Ionian coast, with its sandy beaches and crystal-clear waters, or visit nearby towns such as Manduria, Oria and Grottaglie, each with its own mix of history, castles and artisan ceramics. Returning to Sava in the evening, you can enjoy simple, hearty cuisine in local trattorias—think orecchiette with tomato and ricotta forte, grilled meats, and seasonal vegetables cooked in generous olive oil—accompanied, of course, by a glass of Primitivo.
